WHAT IS SOTOL?

It is a plant from the lily family called Dasylirion, known as the desert spoon or Sotol that grows in the desert in the north of Mexico.  The Sotol has a Denomination of Origin that comprises the states of Chihuahua, Coahuila an Durango and must use be distilled from 100% of Sotol.

This elegant sotol from northern Durango has herbaceous notes with violet blossom and charred mesquite with great acidity and long finish.

100% DASYLIRION

Dasylirion Wheeleri, known as Sotol, is a 100% wild plant that grows abundantly in Don Héctor Jiménez ranch of Ventanas.

DENOMINATION OF ORIGIN

Sotol, like the greatest distillates of the world, has a Denomination of Origin that is composed of 3 states in northern Mexico.

PRODUCTION

In this large estate called Rancho Ventanas, we produce an exquisite hand crafted Sotol, that maintains the tradition that this vinata or distillery has maintained for over 100 years.

HISTORY

Since Don Héctor Jiménez was a child, he learned to produced this extraordinary sotol as a student of master sotolero named Don Domingo Sariñana.  After his passing, the vinata stayed inactive for a few decades.  Rescuing the history and tradition of this famous sotol ranch, Don Héctor and his son Gamaliel, now produce this magnificent sotol.
